Jasmine flowers are collected in the afternoon or at night, by hand, with great care. If the petals are damaged, the fragrance will be ruined. About 8,000 petals must be collected to produce one milliliter of absolute. The petals are so delicate that they cannot be steam distilled, and absolutes are produced using more complex extraction techniques (such as enfleurage or solvents).
